Ingredients

- 1 kg lamb, cut into large cubes (leg or neck preferred)
- 1 large onion, quartered
- 2 bay leaves
- 4 cardamom pods

Instructions
Step 1 – Cook the Lamb
Place the lamb in a large pot and cover it with water. Bring to a boil and skim off any foam that rises to the surface to obtain a clear broth.
Add the onion, bay leaves, cardamom, cinnamon stick, salt, and black pepper. Cover and simmer over low heat for 1½ to 2 hours until the meat becomes tender.
Drain the lamb and reserve the cooking stock.
